Milktart - The traditional way


There are few things as sweet as traditional South African desserts; as for South Africans, they remind of us of younger days when your gran gave you sweet treats every time you visited and for tourists it’s a taste experience like never before.
Melktert (the Afrikaans meaning for Milk Tart in English) is one of South Africa’s most cherished desserts. Melktert is often served at game reserves across the country and is a popular dish for all visitors. Melktert is easy to make at home too as the recipe is quite straightforward, but as with all things in life, practice will make your melktert perfect.
Ingredients for the pastry:
-          2 cups flour
-          1 egg
-          ½ cup sugar
-          2 teaspoons baking powder
-          125g butter
-          Pinch of salt
Method for the pastry:
  1. Cream the butter and sugar well together. Add the egg, before beating well.
  2. Add all other ingredients and this will make a stiff dough.
  3. Press into one or two round cake tins/pie dishes and bake at 180 degrees until light brown.
Ingredients for the filling:
-          4 ½ cups milk
-          2 ½ tablespoons corn flour
-          1 cup sugar
-          3 eggs
-          Pinch of salt
-          2 ½ tablespoons flour
-          1 teaspoon vanilla essence
-          Big spoon of butter
Method for the filling:
  1. Bring milk to the boil.
  2. Beat eggs well and add sugar, flour, corn flour and salt.
  3. Mix well.
  4. Pour boiling milk into the mixture and stir well.
  5. Return to stove and stir well until mixture thickens.
  6. Add butter and vanilla essence and pour into cooked shell.
  7. Allow to cool in the fridge (you don’t have to cook the tart any further.)
