It’s no secret that at Lekker Sosatie we
absolutely love Amarula. Yes, we love the drink itself and yes, we love
the delicious dishes you can make from them. And we also adore the marula fruit which is the main ingredient in this delectably creamy drink. The marula fruit –
which grows on trees in the African bush – is a one-of-a-kind fruit
that is an especially popular treat for the African elephant.
And what better way to celebrate this taste sensation than by making Amarula ice cream – just in time for summer. Making ice cream might sound pretty daunting, but with a bit of patience and a lot of excitement you will be enjoying your Amarula ice cream in no time.
Amarula Ice Cream
Ingredients:
- 1 fresh vanilla pod, the seeds
- 15 egg yolks
- 250 g caster sugar
- 750 ml milk
- 500 ml fresh cream
- 375 ml Amarula cream liqueur

Amarula Ice Cream
Ingredients:
- 1 fresh vanilla pod, the seeds
- 15 egg yolks
- 250 g caster sugar
- 750 ml milk
- 500 ml fresh cream
- 375 ml Amarula cream liqueur
Directions:
- Cut the pod in half (lengthways) and scrape out the seeds.
- Mix the egg yolk with the caster sugar until it is fluffy and white.
- Heat the milk, cream, liqueur and vanilla seeds, but remember: DO NOT BOIL these contents.
- Using a fine mesh strainer remove the vanilla seeds from the mixture.
- Then add the milk mixture into the egg and sugar gently by stirring it constantly.
- Place over a double boiler and stir until you have a custard consistency. And never let it boil.
- Process this mixture through your ice cream machine until it is set. (If you don’t have an ice cream machine let the mixture set in your freezer for eight hours.)
- Then beat into a smooth texture when icicles form in the setting process.
